Scones , Japanese Cheesecake, Banana Cake A’la Bunda Mache Yufrita Noge

Mache Yufrita Noge Oops lupa, ini resepnya:

SCONES

Bahan:

275 gr tepung terigu protein sedang + 1 sdt baking powder + seujung sdt baking soda, ayak 2 kali dan sisihkan.

50 gr gula pasir butiran halus

1/4 sdt garam

Sedikit vanili

65 gr unsalted butter (butter tawar) dingin (dari kulkas)

65 gr margarine, dingin juga

75 gr kismis/sukade/cherry/choc chip/ keju parut dll (buah yg gede, potong kecil2 ya?)

120 Ml plain yogurt/buttermilk /sour cream.

Bahan polesan:

1 butir kuning telur, kocok lepas dg garpu + 1 sdm susu segar, aduk rata.

 

Cara:

1.Panaskan oven 200’C

2.Alasi loyang dg non stick foil atau baking paper.

3.Siapkan wadah yg besar, masukkan campuran tepung, baking powder and bak. soda. Lalu masukkan pula gula, garam dan vanili. Aduk rata dan sisihkan.

Potong2 butter dan margarine dingin dg bentuk dadu2.

4.Lalu masukkan ke dlm campuran tepung. Remas2 dg jari2 (bukan dg telapak tangan ya agar menteganya ga cair). Pastikan adonan ini tidak diuleni tetapi hanya diremas2 saja dg jari2 hingga tepung dan mentega tercampur rata dan berbutir2.

  1. Masukkan kismis atau buah kering lainnya atau coklat chip atau keju parut (sesuai selera masing2)

  2. Aduk rata dg tangan sambil diremas2 sedikit saja dg jari2.

7.Masukkan yogurt, aduk pelan2 dg jari2 (jangan diuleni ya? Nanti sconesnya keras)

8.Adonan akan sedikit beremah2, pindahkan adonan ini ke talenan (meja ulen roti). Padatkan adonannya dg ditepuk2 sambil diputer2, tetap ga boleh diuleni ya?

9.Bentuk adonannya dg ketebalan 5-8 cm. cetak dg cetakan bundar dan letakkan diatas loyang yg sudah dialasi tadi. Poles setiap permukaan scones dg bahan polesan dan masukkan oven. Bakar selama 15 menit. Angkat dan dinginkan di cooling rack.

 

Tips:

Utk scones keju, sisain sedikit kejunya utk ditabur diatas setiap scones.

Utk Devon scones (scone biasa) ga perlu ditambah buah2an dll.

Kalo ga ada yogurt dll, bisa diganti dg campuran susu dan jeruk lemon, biarkan sebentar sebelum di campur ke adonan.

Selain dicetak bulat2, scones juga bisa dipotong2 bentuk kotak2 dg pisau roti (pisau plastik)

 

Setelah dingin, simpan scones dlm wadah tertutup agar tidak kering. Jika ingin sconesnya empuk lagi setelah disimpan beberapa hari,, Panaskan sebentar sconesnya dg toaster atau microwave.

 

 

Penyajian:

Ambil 1 scones, belah dua, olesi mentega, clotted cream (cream padat) dan selei strawberry atau selei apa saja sesuai selera.

Saya lebih suka hanya ngoles scones dg mentega dingin dan selei strawberry.

Japanese Cheesecake

Recipe from The Cookbook Chronicles

600g cream cheese

90g unsalted butter

114g egg yolk (this equals to 6 yolks)

40g sugar

22g cornstarch

300g milk

190g egg white (6 egg whites)

110g sugar

Use an 28 cm cake pan with a fixed bottom

Cut a strip of parchment that is 3 cm higher than the height of the cake pan. Fold 1.5 cm along the long edge and cut a notch to the fold line every 2 cm to allow the strip to line the side of the cake pan. Slits should point into the center of the cake pan. You want the strip to be at least 1 cm taller than the cake pan. (Basically, the notches are just so you can build a perfectly round collar around the base of the pan.) Cut a parchment paper round to line the bottom of the cake pan.

Method:

Preheat the oven to 180°C. Put the egg whites into the freezer so it just begins to freeze around the edges. Sift the cornstarch.

Wrap the cream cheese in clear wrap and microwave until it becomes soft to the touch. You do not want to heat it up. (I did this in about 15 second intervals.)

In a large bowl, melt the butter over a double boiler. Add the cream cheese and

whisk well to combine.

In another bowl, combine the egg yolks and 40g of sugar. Mix in the cornstarch.

Mixing and yolks with the cream cheese

Heat the milk so it comes to a boil. Add it to the egg yolks and whisk until it thickens in a double boiler over boiling water. Add this mixture to the cream cheese and combine well.

Add a small amount of the 110g of sugar to the egg whites and mix on medium low speed for about 2 minutes. Gradually add the remaining sugar to the egg whites and beat on medium until a soft meringue forms.

Add ¼ of the meringue to the cream cheese mixture and combine. Add the remaining meringue to the cream cheese mixture and fold to combine. Fill the cake pan and smooth the top.

Pouring the mixture into the dish

Put the cake pan in a roasting pan and add boiling water so it comes up 1-1.5 cm up the cake pan. Bake for 15 minutes and then lower the temperature to 160°C and continue to bake for 25 minutes until the top turns slightly golden. Turn off the oven and leave the cake pan for another 40 minutes to an hour.

 

Note: The cake will continue to bake with the heat off so do not over bake. Depending on the oven, the cake may not turn golden but should avoid cooking much longer than the suggested time.

Take the cake out of the roasting dish and place on a wire rack to cool completely. Refrigerate and chill completely before taking it out of the pan. It is best served the second day

BANANA CAKE By Mâché Yufrita

Bahan:

4 buah pisang Ambon/pisang raja yang sudah mateng banget (kira2 725 gr di timbang dg kulitnya), kupas dan benyekin hingga jadi bubur, sisihkan

310 gr tepung self raising ayak dg 1 sdt baking soda

240 gr gula pasir

4 butir telur

240 gr (300 ml) mentega cair atau minyak sayur

1/4 sdt garam

Sedikit vanili

Cara:

Panaskan oven 150’C

Kocok gula, telur, garam dan vanili hingga putih

Masukkan pisang dan aduk perlahan dg spatula hingga rata.

Kemudian masukkan tepung secara bertahap dan aduk perlahan hingga rata.

Terakhir masukkan mentega cair/minyak sayur secara perlahan dan aduk pelan2 hingga rata.

Jika mau nambahi poppy seed, sangrai dulu poppy seednnya lalu dinginkan dan baru dimasukin setelah minyak. Demikian juga kalo mau nambahi coklat chip, walnut atau kismis

Masukkan adonannya kedalam loyang yg sudah diolesi mentega cair yg bercampur dg terigu. Bakar selama 50-60 menit.

Jika selama masa pengovenan, kuenya belum mateng tetapi sudah coklat banget, turunin suhu oven dan cepat2 tutup bagian atas dari kue/loyang dg aluminium foil agar kuenya ga hangus.

Silahkan dicoba ya ibu? Insya Allah anti gagal, gampang banget buatnya… Saya tunggu hasilnya… Insya Allah cake ini lembut sekali. Saya sudah sering bikin cake ini dan semua yg sudah coba cake ini pada suka and minta dibuatkan lagi. Makanya saya senang2 aja buatnya krn bikinnya juga super gampang. Coba deh! Harus PEDE yaaaa
